The 1st '08 Chablis. Dauvissat 1er Cru "La Forest"

Paul brought the first 2008 Chablis he found, over to drink after a fabulous Sushi dinner (Sushi Sushi on Beverly Drive in the 90210. A must eat).  Dauvissat 1er Cru "La Forest". First smell was nice, but light, closed up. Just a hint of fruit and warmth. The palate was all acids. We thought it was almost undrinkable at first.  We worked with it slowly, thinking maybe the sushi had affected our palates, so I grabbed bread and cheese. That didn't help.

It needed TIME. Lots of time. 90 minutes later, as Betty White was starting to host SNL, and doing a great job, the wine was starting to round out and open up.  '08 has good promise as a Chablis vintage, the fruit became nicely round, all apple and spice, the signature mineral acids of Chablis in spades. It became a nice drink, but clearly needs more time in the bottle. I suggest leaving this one alone for at least a year, certainly not sooner than Thanksgiving or Christmas.

Drink this wine, just not soon!
